La

Cave

To enhance dishes, Grand Cru and selected local  wines stand alongside in a cellar dug into the rock and managed by our talented sommelier.

Stéphane Benoît – Sommelier for 30 years

Stéphane Benoit has been formed by the most famous French sommeliers such as Jean-Luc Pouteau and Olivier Poussier. Afterwards, he worked in the most well-known restauranst: Le Grand Véfour and Pavillon Elysée Le Nôtre. He was already thinking that working alongside the wine-growers was fundamental to fully understand this trade, therefore he resumed his training within the greatest vineyards especially Gevrey-Chambertin. Armed with this amazing knowledge, he settled down in Tours in 1991 at Château Belmont, Jean Bardet’s two stars restaurant. Two years after, he joined La Roche Le Roy and drew up a list of fine and rare wines which he still inrtoduces with passion.

Le vin est l’école de la modestie et être sommelier c’est avant tout savoir se mettre à la portée de chaque client.
